Ginger Ale Syrup


None alcoholic. Dilute with sparkling water like a cordial. You can slice the ginger instead and dehydrate it afterwards to eat as a sweet. But you may get less of a ginger flavour in the syrup.

211.0 g of white sugarmixsimmercool to room tempstrain/filter as much as practical
233.0 g of brown sugar
6.0 g of citric acid
500.0 ml of water
150.0 g of gingergrate
2.0 tsp of cardamom podstoast in dry pan until just fragrent
1.0 tsp of whole allspice
1.0 tsp of peppercorns
3.0 star anise pods
