Korma Rice and Spinach for 2


One pot spicy rice thing. Easy, quick, tasty and not really Indian. This makes quite a lot, so you might want to vary the rice and water in proportion. Curry paste can also be varied, the original recipe called for 1tbsp for 2 servings.

1.0 tablespoon of oilfry until softfry 2 minsfry 30 secondsfry 30 secondsbring to boilsimmer 10-15 mins until most water has been absorbedstir until spinach is wilted
1.0 onionsliced
2.0 cloves of garlicchopped finely
70.0 g of korma curry paste
2.0 tomatoeschopped
170.0 g of basmati rice
470.0 ml of water
1.0 vegetable stock cube
0.5 can of chickpeasdrained and washed
100.0 g of raisins
50.0 g of pine nuts
100.0 g of spinach
